Preparation Method :

  • Scrub or scrape the potatoes, cover with cold water and bring to the boil. Add salt and simmer for 15 minutes, or until tender. Drain and allow to cool.
  • Cut the potatoes into large dice, season well and combine with the chopped onion.
  • Shell the hard-boiled eggs, set aside the yolk and roughly chop the whites. Place the whites in a mixing bowl and stir in the mayonnaise.
  • Mix the garlic, lemon rind and lemon juice in a small bowl and stir them into the mayonnaise mixture, combining thoroughly.
  • Stir the mayonnaise mixture into the potatoes, coating them well, then fold in the chopped parsley. Press the egg yolk through a sieve and sprinkle on top. Serve cold or chilled, garnished with parsley.


  • 1 kg new potatoes
  • 2 small onion, finely chopped
  • 4 eggs, hard-boiled
  • 500 ml mayonnaise
  • 2 garlic clove, crushed
  • Finely grated rind and juice of 1 lemon
  • 6 tablespoon chopped fresh parsley
  • Salt and ground black pepper
