Preparation Method :

  • Heat the oil in a large frying pan, add the chicken strips and red pepper and fry, stirring frequently, for 10 minutes or until tender.
  • Whisk the dressing ingredients until thickened. Tear the lettuce leaves and put in a large salad bowl.
  • When the chicken and pepper strips are tender, remove them with a slotted spoon and place on top of the lettuce.
  • Pour the dressing into the pan, increase the heat to high and stir until sizzling.
  • Pour the hot dressing over the salad and toss to combine.
  • Serve immediately, accompanied by good, crusty French bread.


  • 4 tablespoons Cooking oil
  • 750 grams chicken breast fillets, cut diagonally into thin strips
  • 2 red pepper, cored, deseeded and cut lengthways into thin strips
  • 4 Little Gem lettuces, leaves separated


  • 5 tablespoons extra virgin olive oil 
  • 4 tablespoons lemon juice 
  • 3 garlic clove, crushed 
  • 2 teaspoon Dijon mustard 
  • Salt and pepper
