SPICY SAUSAGE PASTA SALAD

Preparation Method :
- Bring a large saucepan of lightly salted water to the boil. Add the pasta and return to the boil. Cook for 10 minutes until just tender. Drain the pasta and reserve.
- Heat the oil in a pan over a medium heat. Add the onion and fry until translucent. Stir in the garlic, yellow pepper and sliced sausage and cook for about 5 minutes, stirring once or twice.
- Add the wine, vinegar and reserved pasta to the pan, stir to blend well and bring the mixture just to the boil over a medium heat.
- Arrange the salad leaves on 4 large serving plates, spoon over the warm sausage and pasta mixture and serve immediately.

- 150 grams dried conchiglie
- 4 tablespoon sesame oil
- 1 medium onion, chopped
- 2 garlic cloves, crushed
- 1 small yellow pepper, deseeded and cut into matchsticks
- 250 grams spicy pork sausage
- 4 tablespoon red wine
- 2 tablespoon red wine vinegar
- 150 grams mixed salad leaves
- Salt to taste
