Preparation Method :

  • Cook the broad beans, peas, asparagus and new potatoes in separate pans of lightly salted boiling water until just tender.
  • Mix together the beans, peas, asparagus, potatoes and the eggs.
  • Blend together the mayonnaise, soured cream or creme fraiche and chopped mint in a jug and add seasoning to taste.
  • Pour the dressing over the salad and toss gently adding the whole mint leaves at the last minute. Serve immediately. 


  • 250 grams broad beans
  • 250 grams fresh peas
  • 250 grams asparagus
  • 250 grams very small new potatoes, scrubbed
  • 10 quail's eggs, soft-boiled and peeled
  • 5 tablespoon good lemon mayonnaise
  • 5 tablespoon soured cream or creme fraiche
  • 1 bunch mint, chopped, with a few whole leaves reserved for garnishing
  • Salt and ground black pepper
