SPRINGTIME SALAD

Preparation Method :
- Cook the broad beans, peas, asparagus and new potatoes in separate pans of lightly salted boiling water until just tender.
- Mix together the beans, peas, asparagus, potatoes and the eggs.
- Blend together the mayonnaise, soured cream or creme fraiche and chopped mint in a jug and add seasoning to taste.
- Pour the dressing over the salad and toss gently adding the whole mint leaves at the last minute. Serve immediately.
INGREDIENTS
- 250 grams broad beans
- 250 grams fresh peas
- 250 grams asparagus
- 250 grams very small new potatoes, scrubbed
- 10 quail's eggs, soft-boiled and peeled
- 5 tablespoon good lemon mayonnaise
- 5 tablespoon soured cream or creme fraiche
- 1 bunch mint, chopped, with a few whole leaves reserved for garnishing
- Salt and ground black pepper
