Preparation Method :

  • Process the aubergines in a food processor with the yogurt, red chilli, chopped shallot and garlic to a smooth consistency and pour the mixture into a serving dish.
  • Adjust seasoning with salt and pepper, cover and chill in the fridge for about 1-2 hours.
  • Heat a small frying pan over a medium heat and dry roast the cumin seeds for about half a minute or until the seeds turn dark brown.
  • Garnish the raita with the dry roasted spice and fresh coriander leaves.


  • 350 grams aubergines, stems intact, roasted, peeled, cut the stems  
  • 225 ml natural yogurt
  • 1-2 red chillies, deseeded and finely sliced
  • 1 shallot, finely chopped
  • ½ teaspoon cumin seeds
  • 1 garlic clove, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Fresh coriander leaves, finely chopped, to finish
