A fruit and a vegetable, which are made for each other, form the basis of this fresh-tasting salad.
Serves :

Preparation Time :
20 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Peel the carrots and grate them into a large bowl.
  • Cut a thin slice of peel and pith from each end of the orange.
  • Place the cut side down on a plate, and cut off the peel and pith in strips.
  • Remove any remaining pith. Cut out each segment leaving the membrane behind.
  • Squeeze the remaining juice from the membrane into a bowl.
  • For the dressing,mix the olive oil, lemon juice, and orange juice from the bowl.
  • Season the mixture with a little salt and pepper to taste, and granulated sugar if you like.
  • Toss the orange segments together with the carrots and pour the dressing over.
  • Sprinkle the salad with the pistachio nuts or pine nuts before serving.


  • 450 grams carrots
  • 2 large oranges
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • Pinch of granulated sugar (optional)
  • 2 tablespoons chopped pistachio nuts or toasted pine nuts
  • Salt and ground black pepper
