Preparation Method :

  • Cut the flesh of the seeded peppers into small pieces.
  • Finely chop the celery, shallot and spring onions and chili flakes , discard the seeds.
  • Cook the peeled potatoes in salted water until tender. Drain and cut into cubes.
  • Add the vegetables to the potatoes together with the herbs and garlic.
  • Mix together the cream, mayonnaise, mustard and sugar in a small bowl.
  • Pour the dressing over the salad and stir gently to coat evenly.
  • Garnish with the chopped chives and serve.


  • 2 tablespoon single cream 
  • 3 tablespoon mayonnaise
  • 1 teaspoon prepared mild mustard 
  • 1½ teaspoon granulated sugar
  • 1 kg potatoes 
  • 2 red peppers
  • 2 celery sticks
  • 1 shallot
  • 1 fresh green chilli, flakes 
  • 2 spring onions 
  • 1 garlic clove, crushed 
  • 2 teaspoon finely sliced fresh chives
  • 2 teaspoon finely chopped fresh basil
  • 1 tablespoon finely chopped fresh parsley
  • Salt
  • Chopped fresh chives, to garnish
