GREEN SALAD WITH SANGARITA DRESSING

Preparation Time :
30 minutes

Preparation Method :

  • Mix the lemon juice, sugar and orange rind strips together in a screw-cap jar, and shake occasionally.
  • After some time the sugar will dissolve and form a syrup. Strain the syrup and reserve the orange rind strips.
  • Prepare all the salad vegetables and keep chilled in a bowl in the refrigerator until required.
  • Just before serving, mix the orange juice, grated orange rind, paprika, salt and pepper; then add the syrup.
  • Pour the dressing over the salad, and toss well. Garnish with the orange rind strips.

INGREDIENTS

For the syrup

  • 1 tablespoon lemon juice
  • 1 tablespoon sugar
  • ½ tablespoon orange rind, shredded into strips

For the salad

  • 150 grams cabbage, shredded
  • 150 grams iceberg lettuce, torn
  • 100 grams tender leaves of spinach
  • 75 grams cucumber, diced
  • 50 grams capsicum, diced
  • 75 grams spring onions, sliced
  • 75 grams parsley (ajmoda ke patte), finely chopped

For the dressing

  • 50 ml orange juice, fresh
  • ½ teaspoon orange rind, finely grated
  • ¼ teaspoon paprika
  • salt to taste
  • ¼ teaspoon pepper, coarsely crushed
