Preparation Method :

  • Cook the chickpeas in a pan of boiling water for 1 hour.
  • Drain return to the pan and add the onion, chillies, ginger, salt and cumin. Bring to the boil. Simmer, covered, until the meat and chickpeas are cooked.
  • Cool and grind to a paste in a food processor.
  • Transfer the mixture into a mixing bowl, add the fresh coriander and mint, lemon juice and flour.
  • Knead well, Divide into 10 portions and roll each into a ball, then flatten slightly. Chill for about 45 minutes.
  • Dip the burgers in the beaten egg and shallow fry each side until golden brown serve hot with the lime.


  • 50 grams chickpeas, soaked overnight in water
  • 2 onions, finely chopped
  • 250 grams lean lamb, cut into small cubes
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 6 fresh green chillies, roughly chopped
  • 2 in piece fresh ginger, crushed
  • 1 tablespoon gram flour
  • 2 eggs, beaten
  • Few fresh coriander (cilantro) and mint leaves, chopped
  • Salt, to taste
  • Juice of 1 lemon
  • IDHAYAM sesame oil, for shallow-frying
  • Half a lime
