Preparation Method :

  • Soak dal for 20 minutes remove all water and grind into a fine paste with chillies, asafoetida and salt.
  • Garnish with finely chopped coriander leaves.
  • Make certain the batter is very thick. Heat the oil and pat a little dough over a wet banana leaf, or a plastic sheet, holding it on the palm of the hand.
  • Make a hole on the centre of the dough with the forefinger and drop it in the pre-heated oil.
  • The dough will emit a sizzling sound and within seconds turn it over the other side.
  • When it turns golden remove the vadai from the oil and lay it on a paper napkin spread on a plate.
  • Serve these hot crispy vadais with chutney and sambhar. 


  • 800 grams Urad dal
  • 15 Green chillies
  • 4 tablespoon asafoetida powder
  • 100 grams Coriander leaves
  • Cooking oil for frying
  • Salt to taste
