Preparation Method :

  • Mix together the minced beef and pork, soy sauce, star anise seeds, coriander seeds and black peppercorns, and shape into small balls. Refrigerate for at least 20 minutes.
  • Meanwhile, put all the ingredients for the stock into a large saucepan, bring to the boil and simmer for 10 minutes. Strain.
  • Return the stock to the saucepan and bring back to a gentle boil. Add the chilled meatballs and simmer for 10 minutes or until the meatballs are cooked.
  • Add the rice vermicelli 3 minutes before the end of the cooking time. Serve hot, garnished with chopped coriander.


  • 150 grams minced beef
  • 150  grams minced pork
  • 2 tablespoon soy sauce
  • Seeds from 1 star anise, crushed

For The Stock

  • 2 stalk lemon grass, lightly bruised
  • 2 onions, quartered
  • 4 tablespoon tamarind pulp
  • 4 dried red chillies, chopped
  • 2 teaspoon coriander seeds, crushed
  • 2 teaspoon black peppercorns, crushed
  • 150 grams rice vermicelli noodles
  • Chopped fresh coriander, to garnish
  • 1 inch piece root ginger, chopped
  • 2 inch piece galangal, chopped
