CELERIAC AND DILL SOUP

30 minutes

Preparation Method :

  • Melt the butter in a saucepan with the bay leaf and half the dill. Simmer over a gentle heat for a minute or two to allow the flavours to develop.
  • Add the onion and celeriac, cover and simmer gently for about 10 minutes until they begin to soften.
  • Add the stock and seasoning. Bring to the boil, cover and simmer for about 30 minutes until the vegetables are tender. Remove the bay leaf.
  • Liquidize the mixture then return to the pan and reheat. Remove from the heat, stir in the cream, lemon juice and remaining dill. Check the seasoning and serve. 

INGREDIENTS

  • 100 grams butter or margarine
  • 2 bay leaf
  • 4 tablespoon chopped dill
  • 2 onions, chopped finely
  • 2 medium celeriac, cut into small cubes
  • 1 liter Strong Vegetable Stock  
  • Salt and pepper
  • 5 tablespoon single cream
  • 4 teaspoon lemon juice
