Preparation Method :

  • Add potato, cauliflower and onion into a large heavy pan with the oil and water.
  • Heat until hot, then stir well, cover the pan and simmer. Continue cooking the mixture for 10 -12 minutes.
  • Add the garlic, ginger and spices. Stir well, and cook for another 5 minutes, stir occasionally. Pour in the stock and season well. Bring to the boil, then cover and simmer for at least 30 minutes.
  • Puree in a food processor and return to the pan. Stir in the yogurt, adjust the seasoning, and serve garnished with coriander.


  • 1 large potato, diced
  • 1 small cauliflower, chopped
  • 1 onion, chopped
  • 1 tablespoon Cooking oil
  • 1 garlic clove, crushed
  • 1 tablespoon grated fresh root ginger
  • 2 teaspoon ground turmeric
  • 1 teaspoon cumin seeds
  • 1 teaspoon black mustard seeds
  • 2 teaspoon ground coriander
  • 1 litre vegetable stock
  • 250 ml natural low fat yogurt
  • Salt and black pepper
  • Fresh coriander, to garnish
