SPINACH AND CAULIFLOWER SOUP

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Melt the butter in a large saucepan and add the spinach, onion and cauliflower.
  • Stir in the flour, remove the pan from the heat and gradually blend in the stock.
  • Bring to the boil, stirring frequently, until the mixture thickens.
  • Stir in the Evaporated Milk, nutmeg and seasoning. Cover and simmer for 20 minutes.
  • Place in a food processor and process until smooth. Taste and adjust the seasoning. Serve with croutons.

INGREDIENTS

  • 750 ml chicken stock
  • 400 grams Evaporated Milk
  • 150 grams frozen chopped spinach, thawed
  • 50 grams butter
  • 50 grams onion, finely chopped
  • 200 grams cauliflower florets, chopped
  • 25 grams flour
  • ΒΌ teaspoon nutmeg
  • Black pepper and salt to taste
  • Croutons, to serve
