ALOO WITH PEANUTS

Preparation Method :

  • Pour 4 cups of water in a pan. Add teaspoon salt and boiI the potato strips in it for about 5 minutes till tender but firm. Strain.
  • Heat oil in a non-stick pan, add cumin seeds and mustard seeds, stir and add the peanuts. Stir on medium heat till light golden.
  • Add green chilies and curry leaves and stir. Add the potatoes and stir till well coated in oil. Cook till slightly dry for about 1-2 minutes.
  • Add salt and turmeric. Mix well and add grated coconut. Cook for 5-7 minutes on medium heat, stirring all the time. Remove from heat and sprinkle lemon juice. Serve hot.

  • 4 potatoes - peeled and cut into thin long pieces
  • 50 grams peanuts - split into 2 pieces
  • 200 grams freshly grated coconut
  • 4 tablespoon sesame oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 20 curry leaves
  • 4 green chillies-cut into thin strips
  • 1 teaspoon salt, or to taste
  • Pinch of turmeric powder
  • 1 tablespoon lemon juice
