Preparation Method :

  • Place the egg white, half of the wine or sherry and the corn flour in a bowl and stir until well blended and smooth.
  • Add the chicken cubes and toss until evenly coated.
  • Heat the oil in a wok or large frying pan. Add the spring onions, garlic and ginger and stir-fry for 30 seconds.
  • Add the chicken and cook for about 5 minutes. Pour in the remaining wine or sherry and the soy sauce and stir well.
  • Add the cashew nuts to the wok and cook for a further 30 seconds.
  • Serve at once.


  • 2 egg white, lightly beaten
  • 6 tablespoons Chinese rice wine or dry sherry
  • 4 teaspoons corn flour
  • 500 grams boneless, skinless chicken, cut into 1 cm cubes
  • 5 tablespoons IDHAYAM Mantra Groundnut oil
  • 6 spring onions, chopped
  • 4 garlic cloves, chopped
  • Piece fresh root ginger, peeled and finely chopped
  • 2 tablespoon light soy sauce
  • 200 grams unsalted cashew nuts
