CHILLI FRY

Preparation Method :

  • Heat the oil in a frying pan, add the onion and fry until soft.
  • Add the ground coriander, turmeric, ginger and chilli, fry for about 2-3 minutes. Add little water if needed.
  • Add the strips of chicken and cook, stirring, until browned all over.
  • Add the chopped pepper, cover and simmer gently for 5-7minutes or until the meat is tender.
  • Add the tomatoes, lemon juice and cook, uncovered, for about 2 minutes.
  • Adjust seasoning with salt. Serve with lemon wedges.

INGREDIENTS

  • 550 grams chicken, cut into strips
  • 1 onion, finely chopped
  • 1 teaspoon ground coriander
  • 50 ml lemon juice
  • 1 inch piece fresh root ginger, finely chopped
  • 1 green or red pepper, cored, deseeded and roughly chopped
  • 50 ml Peanut oil
  • 2 tomatoes, quartered
  • ½ teaspoon turmeric
  • 1 chilli, chopped
  • Salt, to taste
  • Lemon wedges, to serve
