Preparation Method :

  • Combine the bread crumbs and sage in a shallow dish. Season with salt and pepper. Coat the turkey with the flour and eggs then press into the crumb mixture.
  • Boil the sweet potatoes until tender, about 10 minutes. Drain and return to the pan. Add the milk, butter, nutmeg, salt, and pepper. Mash until smooth.
  • Heat the oil in a frying pan over medium heat. Cook the turkey until golden and crisp, 3-4 minutes each side. Serve hot with the sweet potatoes.


  • 150 grams fresh bread crumbs
  • 100 grams finely chopped fresh sage leaves
  • Salt and freshly ground black pepper
  • 6 turkey breast fillets
  • 4 tablespoons all-purpose (plain) flour
  • 4 large eggs, lightly beaten
  • 1 kg sweet potatoes, peeled and cut into large chunks
  • 100 ml milk
  • 4 tablespoons butter, diced
  • Pinch of ground nutmeg
  • 4 tablespoons sesame oil
