EGGS BAKED ON CHIPSTICKS

Preparation Method :
- Mix the salted chipsticks, chopped chillies, coriander and turmeric in a bowl.
- Heat 2 tablespoon of the oil in a frying pan. Add the chipstick mixture and water. Cook until the chipsticks turn soft and crisp.
- Turn the pancake carefully and allow to cook till it turns brown on the other side.
- Gently break the eggs over the pancake, cover and allow the eggs to set. Season well and sprinkle with spring onions. Serve hot.

- 5 tablespoon water
- 6 eggs
- 4 scallions, finely chopped
- 2 fresh green chillies, finely chopped
- A few coriander sprigs, chopped
- ¼ teaspoon ground turmeric
- Salt and ground black pepper, to taste
