FISH AND VEGETABLE SKEWERS

Preparation Method :

  • Mix together the lemon juice, ginger, chopped green chilies, fresh coriander, mint, ground coriander and salt in a bowl .
  • Add the fish chunks to the mixture , cover and leave to marinate for about 20-30 minutes.
  • Cut the red and green peppers into large squares and divide the cauliflower into individual florets.
  • Preheat the grill to hot. Arrange the peppers, cauliflower florets, button mushrooms and cherry tomatoes alternately with the fish pieces on 4 -5 skewers.
  • Brush the kebabs with the oil and any remaining marinade. Transfer to a flameproof dish and grill for 5 minutes or until the fish is cooked right through.
  • Garnish with lime quarters and serve the kebabs on a bed of yellow rice.

INGREDIENTS

  • 300 grams firm white fish fillets, such as cod
  • 50 ml lemon juice
  • 1 teaspoon grated fresh root ginger
  • 3 fresh green chilies, very finely chopped
  • 1 tablespoon very finely chopped fresh coriander (cilantro)
  • 1 tablespoon very finely chopped fresh mint
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 red (bell) pepper
  • 1 green (bell) pepper
  • ½ medium cauliflowers
  • 10  buttons (white) mushrooms
  • 9 cherry tomatoes
  • 1 tablespoon Cooking oil
  • 1 lime, quartered, to garnish (optional)
  • Yellow rice, to serve
