Preparation Method :

  • Apply the lemon juice, salt and pepper to the fish fillets and leave or at least half an hour.
  • Mix together the tomato, parsley, onions, green chilli, and a little salt. divide the mixture into 4 portions and spread over the fillets, starting from the tail end, roll up each piece like a Swiss roll.
  • Place each roll in the seasoned flour, turning it so that it is completely covered. Press the roll firmly with your hand so that flour sticks well.
  • Mix the remaining flour with half the beaten egg to make a batter of coating consistency, adding a little water if necessary. Dip each fish the batter.
  • Heat some oil in a frying pan and deep-fry each fish roll until it turns pale golden brown. Remove, drain well and keep aside.
  • Heat the oil again and fry the rolls again till they become golden brown and cooked through. Serve with a potato mayonnaise and grilled tomatoes.


  • 4 pomfret or surmai fish fillets
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 medium tomato, finely chopped
  • 50 grams parsley / coriander leaves ,finely chopped
  • 2 tablespoons onion, finely chopped
  • 1 small green chilli, finely chopped
  • 150 grams flour, seasoned
  • 1 egg, beaten water, if required
  • Cooking oil to deep-fry
