Preparation Method :

  • Combine the lamb and bell pepper in a food processor and process until a coarse paste forms. Use wet hands to shape the mixture into twelve sausage-shaped lengths.
  • Thread each kofta onto a metal skewer.
  • Mix the couscous and mint in a medium bowl. Pour the stock over the couscous mixture. Cover the bowl and let stand until the couscous has absorbed the liquid, about 10 minutes. Fluff up with a fork and set aside.
  • Preheat a grill pan or barbecue on high. Grill the koftas until cooked through, about 5 minutes on each side. Serve hot on a bed of the minted couscous.


  • 1 kg ground (minced) lamb
  • 2 red bell pepper (capsicum), seeded and finely chopped
  • 500 grams instant couscous
  • 5 tablespoons finely chopped fresh mint
  • 600 ml chicken stock, hot
