Preparation Method :

  • Put the steak on a work surface and season generously with salt. Put the whole black peppercorns on a work surface and cover with foil.
  • Use a meat tenderizer to smash the pepper, so that the corns are cracked. Sprinkle over the meat, working it into the surface with your fingertips.
  • Preheat a grill pan or barbecue on high. Drizzle with 1 tablespoon of oil.
  • Cook the steak on the grill until browned on the outside and cooked to your liking within, 10 minutes, depending on how thick the steak is and how well done you like it. Transfer to a serving platter or board.
  • Put the arugula in a bowl, season with salt, and drizzle with the remaining 3 tablespoons of oil. Toss well to coat. Slice the steak and serve hot with the arugula.
