Preparation Method :

  • Cut the chicken into strips. Mix the wine or sherry with the spring onions and ginger.
  • Add the chicken and toss well to coat the pieces. Set aside to marinate for 15 minutes.
  • Heat the oil in a wok or large frying pan and add the garlic, celery and green pepper.
  • Stir-fry for 1 minute. Add the marinated chicken and cook for a further 5 minutes.
  • Stir in the soy sauce, lemon juice and rind and the chilli powder, and cook for 1 minute more.
  • Transfer to a warmed serving dish and garnish with lemon slices and a sprig of parsley, if liked.
  • Serve the sauce with the dumplings.


  • 500 grams chicken 
  • 4 tablespoons Chinese wine or dry sherry
  • 8 spring onions, chopped
  • Piece fresh root ginger, peeled and finely chopped
  • 4 tablespoons IDHAYAM sesame oil
  • 4 garlic cloves, sliced
  • 4 celery sticks, sliced diagonally
  • 2 small green pepper, cored, deseeded and sliced lengthways
  • 4 tablespoons light soy sauce 
  • Juice of 1 lemon
  • Rind of 4 lemons, shredded 
  • 1 teaspoon chili powder

To Garnish (optional)

  • Lemon slices 
  • Parsley sprigs
