ADZUKI BEAN AND RICE BURGERS

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat half of the oil in a saucepan and cook the onion gently for about 5-7 minutes or until soft.
  • Add the garlic and curry paste, cook for about half a minute. Stir in the rice and beans.
  • Pour in the stock, bring to the boil and simmer for 10-15 minutes or until all the stock has been absorbed.
  • Add the tofu to the rice mixture with the garam masala, coriander, salt and pepper. Mix well.
  • Divide the mixture into 8-10 burgers. Chill in the refrigerator for about 20-30 minutes.
  • The Raita: Mix together the carrots, cucumber and Greek yogurt. Spoon it into a small bowl and chill in the refrigerator until ready to serve.
  • Heat the remaining oil in a large frying pan. Fry the burgers, in batches for about 5 minutes on each side or until lightly browned.
  • Serve in the baps with tomato slices and lettuce. Accompany with the raita.

INGREDIENTS

  • 500 grams adzuki beans, drained and rinsed
  • 225 grams uncooked basmati rice
  • 200 ml vegetable stock
  • 150 grams firm tofu, crumbled
  • 2 tablespoon Sesame oil
  • 1 onion, peeled and very finely chopped
  • 1 garlic clove, peeled and crushed
  • 1 teaspoon curry paste
  • 1 teaspoon garam masala
  • 2 tablespoon freshly chopped coriander leaves
  • Salt and freshly ground black pepper, to taste
  • Wholemeal baps tomato slices lettuce leaves, to serve 

Carrot Raita

  • 150 ml Greek yogurt
  • 150 grams carrots, peeled and grated
  • ½ cucumber, cut into tiny dice
