Preparation Method :

  • Heat the oil in a thick-bottomed pan till it starts smoking. Reduce heat, add asafoetida and mix till it dissolves.
  • Add red chilli paste and stir for about half a minute. Add the bottle gourd and fry for a minute or two.
  • Add in all the remaining ingredients and stir well. Adjust seasoning with salt. Cook covered, stirring occasionally.
  • Remove when the vegetable is done but firm to bite. Serve hot.


  • 1 kg Bottle gourd, scraped, washed, cut into thick rounds
  • 150 grams Yogurt, hung
  • 50 ml Mustard oil
  • 2 teaspoon Red chilli paste
  • 1 teaspoon Garam masala
  • 1 teaspoon Dried ginger powder  
  • ¾ teaspoon Fennel powder
  • A small pinch Asafoetida
  • Salt to taste
