COURGETTES WITH MUSHROOMS IN A YOGURT SAUCE

The slightly tart flavour of yogurt makes a creamy sauce, which is delicious with cooked mushrooms and courgettes.

Preparation Method :

  • Heat the oil in a heavy pan and fry the onion until golden brown.
  • Lower the heat to medium, add the ground coriander, cumin, salt, and chilli powder. Stir together well.
  • Once the onion and the spices are well blended, add the mushrooms and courgettes, and stir-fry gently for about 5 minutes until soft.
  • If the mixture is too dry, add just a little water to loosen.
  • Finally, add the yogurt and mix it well into the vegetables.
  • Sprinkle with chopped fresh coriander and serve immediately.

 

INGREDIENTS

  • 1 tablespoon Cooking oil
  • 1 medium onion, roughly chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon chilli powder
  • 250 grams mushrooms, sliced
  • 2 courgettes (zucchini), sliced
  • 3 tablespoons natural (plain) low-fat yogurt
  • 1 tablespoon chopped fresh coriander (cilantro)
