Preparation Method :

  • Heat the oil in a Balti pan, wok or large frying pan over a medium heat. Add the onion and garlic and cook until golden brown.
  • Add the chilli powder, coriander and turmeric and cook for 2-3 minutes, stirring all the time.
  • Add the vegetables, tomatoes and water. Cover the pan and simmer for 15 minutes, until the vegetables are tender, stirring occasionally.
  • If using, add the Balti sauce about 10 minutes before the end of the cooking time. 


  • 500 grams mixed vegetables, cut into bite-sized pieces
  • 50 ml sesame oil
  • 2 small onion, finely chopped
  • 2 clove garlic, crushed  
  • 2 teaspoon chilli powder
  • 3 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 4 tomatoes, skinned and chopped
