POTATO CURRY

Preparation Method :

  • Heat the oil in a saucepan. Simmer to low flame, add the onion seeds, the fennel seeds and the curry leaves, stir continuously.
  • Remove the pan from the heat and add the remaining ingredients, stir well to combine.
  • Return the pan to the heat and stir- fry the spicy mixture for a minute.
  • Pour the mixture over the cooked potatoes, mix gently without breaking up the potatoes and stir-fry for about 3-5 minutes.
  • Transfer the potato curry to serving dishes and serve immediately.

INGREDIENTS

  • 3 medium potatoes, washed, peeled, cut into 6 slices, cooked but not mushy and drained
  • 100 ml IDHAYAM sesame oil
  • 1 teaspoon onion seeds
  • ½ teaspoon fennel seeds
  • 1 teaspoon ground cumin
  • 1 teaspoon amchur
  • 1 teaspoon ground coriander
  • ¼ teaspoon turmeric
  • Salt and chilli powder, to taste
  • Few curry leaves
