POTATOES IN YOGURT SAUCE

Preparation Method :

  • Boil the potatoes in salted water with their skins on until they are just tender, then drain . Chop the coriander leaves finely and set it aside.
  • Mix the yogurt, turmeric, chili powder, ground coriander, ground cumin, sugar, salt and water in a bowl. Set aside.
  • Heat the oil in a medium heavy pan and stir in the cumin seeds. Fry until it splutter.
  • Reduce the heat, stir in the yogurt mixture and cook for about 3 - 5 minutes over a medium heat.
  • Add the cooked potatoes, green chilies and chopped coriander. Mix everything together and cook further 5 minutes, stirring occasionally. Serve hot.

INGREDIENTS

  • Small bunch fresh coriander 
  • 500 grams potatoes, halved
  • 250 grams natural low fat yogurt 
  • 350 ml water 
  • ¼ teaspoon ground turmeric 
  • 1 teaspoon chilli powder
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin 
  • 1 teaspoon soft brown sugar 
  • Salt to taste
  • 1 tablespoon Cooking oil
  • 1 teaspoon cumin seeds 
  • 2 green chillies, sliced
