Preparation Method :

  • Heat the oil in a pan. Add the onions and fry until golden brown.
  • Add the spice mixture and stir-fry for about 3-5 minutes.
  • Pour the water into the pan, cover and cook until all of the water has evaporated completely.
  • Add the boiled black-eye beans, green chillies and coriander leaves, stir well. Stir-fry the bean mixture for about 5 minutes.
  • Transfer the black-eye beans to a serving dish and sprinkle over the lemon juice. Serve warm.


  • 150 grams black-eye beans, rinsed, soaked, cooked and drained
  • 150 ml water
  • 100 grams medium onions, sliced
  • 2 tablespoon Cooking oil
  • 2-3 green chillies
  • Fresh coriander leaves
  • 1 tablespoon lemon juice

Spice Mixture

  • 1 inch fresh ginger root, finely chopped
  • 4-6 fresh garlic cloves, crushed
  • Salt and chilli powder, to taste
  • A pinch of turmeric
  • 2 teaspoon ground coriander
  • 2 teaspoon ground cumin
