Preparation Method :

  • Heat the oil in a karahi, wok or heavy pan and fry the curry cumin seeds and dried chilies for 1 minute.
  • Cut the carrots, peppers and courgettes into matchsticks, halve the beans and chop the spring onions. Set aside.
  • Add the vegetables and nuts and stir them around gently. Sprinkle the salt and lemon juice. Continue to and cook for about 5 minutes.
  • Transfer the vegetables to a serving dish, garnish with fresh mint and serve immediately.


  • 2 medium carrots
  • 1 medium red pepper, seeded
  • 1 medium green pepper, seeded
  • 2 courgettes
  • 125 grams green beans
  • 1 medium bunch spring onions (scallions)
  • 1 tablespoon Cooking oil
  • 6 curry leaves
  • ½ teaspoon cumin seeds
  • 4 dried red chilies
  • 10 cashew nuts
  • Salt to taste
  • 2 tablespoon lemon juice
  • Fresh mint leaves, to garnish
