Preparation Method :

  • Heat the oil in a large saucepan. Add the mustard, onion and white cumin seeds along with the curry leaves and fry until they turn a shade darker.
  • Add in the onions to the pan followed by the tomatoes and bell pepper, stir fry each for about 5-7 minutes.
  • Add the ginger, garlic, chilli powder, turmeric and salt, mix well.
  • Add the water, cover and simmer for about 10-15 minutes.
  • Add the vegetable mixture and stir-fry for about 5 minutes.
  • Add the lemon juice, stirring to combine. Stir in little water if needed, cover and simmer for about 10-15 minutes, stirring occasionally.
  • Transfer the mixed vegetables to serving plates and serve hot.


  • 500 grams onions, finely chopped
  • 250 grams tomatoes, chopped
  • ½ red bell pepper, sliced
  •  ½ green bell pepper, sliced
  • 100 ml Cooking oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon onion seeds
  • ½ teaspoon white cumin seeds
  • Few curry leaves, chopped
  • 500 ml water
  • 1 tablespoon lemon juice

Spicy Mixture

  • 1 inch fresh ginger root, finely chopped
  • 4-5 fresh garlic cloves, crushed
  • Chilli powder and salt, to taste
  • ½ teaspoon turmeric

Vegetable Mixture

  • 150 grams medium potatoes, peeled and cut into pieces
  • ½ cauliflower, cut into small florets
  • 250 grams carrots, peeled and sliced
  • 3-4 green chillies, finely chopped
  • Fresh coriander leaves
