Preparation Method :

  • Heat the oil in a large heavy pan. Add the cumin seeds and mud seeds and fry until they start to splutter.
  • Mix the turmeric, chili powder, cumin, ground coriander, salt, sugar, lemon juice and fresh coriander in a mixing bowl .
  • Add in the spice mixture and continue to fry for 3-5 minutes.
  • Add the okra, cover and cook over a low heat until tender.
  • Transfer to a serving platter and garnish with chopped fresh tomatoes.


  • 450 grams okra (ladies finger), washed and trimmed
  • ½ teaspoon ground turmeric
  • 1 teaspoon chilli powder
  • 1 tablespoon ground cumin 
  • 1 tablespoon ground coriander
  • Salt to taste 
  • ¼ teaspoon granulated sugar 
  • 1 tablespoon lemon juice 
  • 2 tablespoon chopped fresh coriander 
  • 1 tablespoon IDHAYAM sesame oil 
  • ½ teaspoon cumin seeds 
  • ½ teaspoon black mustard seeds 
  • Chopped fresh tomatoes, to garnish
