Preparation Method :

  • Mix the amchur, ginger, cumin, chilli, if using, turmeric and salt with a few drops of vegetable oil in a bowl. Allow to rest for an hour.
  • Part the slit carefully without opening it all the way and fill each with the filling.
  • Coat the okra with the cornflour evenly.
  • Heat a wok or large pan with enough oil and fry the okra in batches for about 5 minutes or until they are brown and slightly crisp. Serve hot.


  • 220 grams okra, washed, tips trimmed, slit lengthwise in the centre.
  • 20 grams corn flour 
  • ½ teaspoon ground cumin 
  • ½ teaspoon chilli powder 
  • 1 tablespoon amchur 
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground turmeric 
  • IDHAYAM Sesame Oil, for frying and mixing
  • Salt, to taste
