Preparation Method :

  • Heat the oil and fry the onions until golden brown.
  • Add garlic, ginger, green chillies and ground cumin, With aubergines and tomato puree and stir-fry for about 2-3 minutes.
  • Add potatoes with salt and sliced onion. Continue to stir-fry for a further 5 minutes.
  • Add fresh coriander and water Cover, simmer for about 10- 12 minutes or until the potatoes and aubergines are tender. Serve with chapati.


  • 5 tablespoons peanut oil
  • 2 medium onions, peeled and finely chopped
