Preparation Method :

  • Heat the oil in a large frying pan. When hot add the cumin seeds and when browned, remove the pan from the heat.
  • Add all the remaining spices with the salt. Stir to mix, return to the heat and cook for about 20-30 seconds.
  • Add the potatoes and coat well in the spices. Saute for 5 minutes, then add the fresh coriander and toss.
  • Adjust the seasoning with salt, chilli and dried mango powder and serve.


  • 450 grams potatoes, peeled, halved, boiled and drained
  • 50 ml Cooking oil
  • 2 teaspoon cumin seeds
  • 2 teaspoon ground coriander
  • ½ teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • Chilli powder, to taste
  • Dried mango powder, to taste
  • Salt, to taste
  • Handful of fresh, chopped coriander
