Preparation Method :

  • Boil the potatoes in a pan of salted water until just cooked but still firm. Remove from the heat and drain off the water.
  • In a wok or deep pan, heat the oil quickly over a high heat, then turn down the heat to medium.
  • Add the chillies, cumin, fennel and coriander seeds and salt and quickly stir-fry for about 30 seconds.
  • Add the onion and fry gently until golden brown. Then add the potatoes, red chillies and coriander.
  • Cover and cook for about 5 minutes over a very low heat. Serve hot.


  • 12 baby new potatoes, peeled, halved
  • 1 medium onion, sliced 
  • 4 fresh red chillies, chopped
  • 1 tablespoon chopped fresh coriander 
  • ½ teaspoon crushed dried red chillies
  • ½ teaspoon cumin seeds
  • ½ teaspoon fennel seeds
  • ½ teaspoon crushed coriander seeds
  • 1 tablespoonIDHAYAM sesame oil 
  • Salt to taste
