Preparation Method :

  • Heat the oil in a heavy pan. Lower the heat slightly and add all the ingredients except coriander and chillies. Fry for 1 minute.
  • Add the onions and fry for 3- 5 minutes or until the onions turns golden brown.
  • Add the potatoes, fresh coriander and fresh red and green chillies and mix well.
  • Cover the pan tightly with a lid or foil; make sure that foil does not touch the food.
  • Cook over a very low heat for about 5-7 minutes or until the potatoes are tender.                          
  • Remove the pan from the heat, and take off the lid or foil cover. Serve hot straight from the pan.


  • 1 tablespoon Cooking oil
  • 1 teaspoon cumin seeds
  • 3 curry leaves
  • 1 teaspoon crushed dried red chilies
  • ½ teaspoon mixed onion, mustard and fenugreek seeds
  • ½ teaspoon fennel seeds
  • 4 garlic cloves, sliced
  • 1 in piece fresh root ginger, grated
  • 2 onions, sliced
  • 6 new potatoes, thinly sliced
  • 1 tablespoon chopped fresh coriander (cilantro)
  • 1 fresh red chilli, seeded and sliced
  • 1 fresh green chilli, seeded and sliced
