Preparation Method :

  • Wash and lightly boil the potatoes until just tender. Drain and set aside.
  • Heat a heavy-based saucepan, add sesame seeds and dry- roast them, until colour turns to golden brown.
  • Shake the saucepan continuously to prevent them burning. Set aside.
  • In the same pan heat the oil and fry the spring onions until soft, then add salt and all the spices, with green chillies and fresh coriander.
  • Add the potatoes and stir-fry gently for about 5 minutes, take care not to break the potatoes.
  • Add in the sesame seeds and shake the pan so that the potatoes are well coated. Serve hot.

INGREDIENTS

  • 10 -12 small new potatoes, unpeeled 
  • 2 teaspoons sesame seeds 
  • 5 tablespoons peanut oil 
  • 5 spring onions (use whole of onion including green parts) 
  • 1 teaspoon salt
  • ½ teaspoon white cumin seeds 
  • ½ teaspoon mustard seeds 
  • 5 curry leaves
  • 3 green chillies, deseeded and slit down the middle 
  • 2 tablespoons fresh coriander
