Preparation Method :

  • Cook the carrots, potatoes and green beans into a pan of boiling water for about 5-7 minutes or until they are just tender but firm to bite . Drain and set it aside.
  • Heat the butter and oil in a deep frying pan or a large karahi and add the onion seeds, fenugreek seeds, dried red chillies, and mustard seeds and curry leaves.
  • When sizzled for a few seconds, add the onion and fry for 5 minutes, stirring the mixture occasionally.
  • Add the salt, garlic and fresh chillies, with the cooked vegetables and stir gently for about 5 minutes, over a medium heat.
  • Add the fresh coriander and mint and serve hot.


  • 150 grams parisienne carrots
  • 150 grams parisienne potatoes
  • 125 grams green beans, sliced
  • 75 grams tablespoon butter
  • 1 tablespoon Cooking oil
  • ¼ teaspoon onion seeds 
  • ¼ teaspoon fenugreek seeds 
  • 4 dried red chillies
  • ½ teaspoon mustard seeds 
  • 6 curry leaves
  • 1 medium onion, sliced
  • 1 teaspoon salt 
  • 4 garlic cloves, sliced 
  • 4 fresh red chillies 
  • 1 tablespoon chopped fresh coriander (cilantro) 
  • 1 tablespoon chopped fresh mint, plus 1 mint sprig to garnish
