Preparation Method :

  • Chop the vegetable into medium small pieces.
  • Cook the vegetable in the pressure-pan with salt and water. If possible release before the first whistle.
  • Heat oil in a pan. Roast the mustard seeds. Add the curry leaves and the vegetables.
  • Add chilly powder rice flour and hing powder and stir over fire for five minutes.
  • Taste and add jaggery and more salt if required.
  • Serve hot with rice.


  • 1 kg bitter gourd
  • 2 tablespoon rice flour
  • 1 teaspoon chili powder
  • 1 teaspoon asafetida
  • 1 teaspoon mustard seeds
  • A few curry leaves
  • 2 teaspoon Jaggery
  • 4 tablespoons Cooking oil 
  • Salt to taste
