COURGETTES AND FENUGREEK SEEDS

Preparation Method :

  • Heat the oil in a large frying pan. Add the onion, green chillies, ginger and garlic to the pan, stir well to combine.
  • Add the sliced courgettes and the sliced tomatoes to the pan and stir-fry for 5-7 minutes.
  • Add the coriander and fenugreek seeds to the courgette mixture in the pan and stir-fry for about 3-5 minutes.
  • Remove the pan from the heat and transfer the courgette and fenugreek mixture to serving dishes. Garnish and serve hot with chapatis.

INGREDIENTS

  • 500 grams courgettes, sliced
  • 100 grams tomatoes, sliced
  • 50 grams onion, finely chopped
  • 3-4 green chillies, finely chopped
  • 50 ml Cooking oil
  • 1 inch fresh ginger root, finely chopped
  • 3-4 fresh garlic cloves, crushed
  • 2 teaspoon fenugreek seeds
  • Chilli powder and salt, to taste
  • Fresh coriander leaves
