SWEET-AND -SOUR ONIONS

Cooked in this way, sweet baby onions make an unusual yet tasty side dish.
Serves :
6

Preparation Method :

  • Put all the ingredients in a pan with 300 ml water.
  • Bring to boil and simmer gently, uncovered, for 45 minutes or until the onions are tender and most of the liquid evaporates.
  • Remove the bay leaf and parsley.
  • Check the seasoning, and transfer to a serving dish.
  • Serve at room temperature.

INGREDIENTS

  • 450 grams baby onions, peeled
  • 50 ml wine vinegar
  • 45 ml Cooking oil
  • 40 gms castor (superfine) sugar
  • 50 ml tomato puree (paste)
  • 1 bay leaf
  • 2 parsley sprigs
  • 65 grams raisins
  • Salt and ground black pepper
