TENDER COCONUT AND CASHEW NUT SUKKE

Preparation Method :

  • Heat oil in a pan and add cumin seeds and when they crackle, add onion and sauté till they are translucent. Add curry leaves and stir well.
  • Then add tomatoes and cook till pulpy.
  • Add turmeric powder, chili powder, Garam masala and ginger-garlic paste and little water and cook by stirring frequently.
  • Now add tender coconut strips and soaked cashew nuts and sauté for 3 minutes.
  • Add coconut milk and cook till almost dry.
  • Finally add tomato ketchup and sufficient salt and mix well. Cook for 2 minutes.
  • Transfer to a bowl and garnish with fresh coriander leaves.
  • Serve hot.

INGREDIENTS

  • 30 Cashew nuts, soaked for 1 hour
  • 1 tablespoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 2 large onions, finely chopped
  • 2 large tomatos finely chopped
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon Garam masala powder
  • 5-6 curry leaves
  • 4 tablespoons IDHAYAM sesame oil                              
  • Salt to taste
  • 2 tablespoons tomato ketchup
  • 2 tablespoons finely chopped fresh coriander
  • 100 ml thick coconut milk
