Preparation Method :

  • Blanch the spinach in salted boiling water for 2 minutes and drain out.
  • Heat oil in a wok or large pan and reduce the flame.
  • Add potatoes. Stir fry for 5 minutes. Cook covered for 10 minutes, sprinkling a little water ocassionally, till the potatoes turn soft. Keep it aside.
  • Reheat the pan and add crushed cloves and pepper corns.
  • Add garlic and sauté a bit till it starts to change colour.
  • Add onions and stir fry till golden.
  • Add turmeric powder, chilli powder, garam masala, amchur and salt. Mix well on low flame for a minute.
  • Add spinach, shredded ginger. Continue cooking, without covering, for about 10 minutes, till the spinach gets done and is well blended with the potatoes.
  • Serve with Roti or Rice.


  • 400 grams spinach leaves - cut into fine ribbons
  • 100 grams potatoes - peeled and cut into 1" pieces 
  • 1" piece ginger - grated into long shreds 
  • 3 tablespoon Cooking oil
  • 2 cloves - crushed
  • 2 pepper corns - crushed
  • 5-6 flakes garlic - chopped & crushed to a rough paste
  • 2 onions - finely chopped 
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • ½ teaspoon garam masala
  • ¼ teaspoon amchur
  • Salt to taste
