Preparation Method :

  • Place the spinach, tomatoes, garlic, onion, ginger, chilli and salt in a saucepan. Cover and cook for about 15 minutes, stirring occasionally.
  • Uncover and reduce most of the excess water over a high heat. Cool slightly, then puree and return to the pan.
  • Sprinkle over the flour and stir into the pan. Cook for another 5 minutes, adding more water if needed.
  • The spinach should be thick but still a puree. Stir in the garam masala, lemon juice to taste and the butter. Serve hot.


  • 500 grams fresh spinach, washed and chopped
  • 2-3 garlic cloves, roughly chopped
  • ½ small onion, roughly chopped
  • 100 grams tomatoes, chopped
  • 1 inch piece of fresh ginger, peeled and roughly chopped
  • 1-2 green chillies, seeded
  • 1 teaspoon butter
  • 2 teaspoon gram flour  
  • A pinch of garam masala
  • Salt to taste
  • Lemon juice to taste
