Preparation Method :

  • Heat the oil in a wok or heavy pan and fry the onions with the curry leaves and the onion seeds until it splutter.
  • Add the ginger, garlic, chilli powder, salt and ground coriander. Stir-fry for a further 1-2 minutes.
  • Add half the red pepper slices and all the mushrooms and continue to stir-fry for at least 2 minutes.
  • Add the spinach and stir-fry for 5 minutes, then add the ricotta and half the fresh coriander, with the remaining red pepper slices.
  • Stir-fry for few minutes before serving, garnish with the coriander sprigs.


  • 125 grams mushrooms, roughly chopped
  • 250 grams low fat fromage frais or ricotta cheese
  • 450 grams fresh or frozen spinach, thawed
  • 2 medium onions, diced 
  • 50 ml Cooking oil
  • 6-8 curry leaves 
  • ¼ teaspoon onion seeds 
  • 1 teaspoon crushed garlic
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon chilli powder 
  • Salt to taste
  • 1½ teaspoon ground coriander 
  • 1 large red pepper, seeded and sliced
  • 2 tablespoon fresh coriander leaves
