MASALA OKRA

Okra, or "lady's finger” is a very popular Indian vegetable. Here the pods are stir-fried with a dry masala mixture to make a tasty side dish.
Serves :

Preparation Method :

  • Wash, dry, and trim the stalks away from the top of the okra, being careful not to pierce the pod itself. Set the okra aside.
  • In a bowl, mix the turmeric, chilli powder, cumin, ground coriander, salt, sugar, lemon juice, and fresh coriander.
  • Heat the oil in a large, heavy pan. Add the cumin seeds and mustard seeds, and fry for about 2 minutes or until they start to splutter.
  • Scrape in the spice mixture and continue to fry for 2 minutes.
  • Add the okra, cover, and cook over low heat for 10 minutes, or until tender.
  • Garnish with chopped fresh tomatoes and serve with poppadums.

INGREDIENTS

  • 450 grams okra
  • ½ teaspoon ground turmeric
  • 1 teaspoon chilli powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • ¼ teaspoon salt
  • ¼ teaspoon granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh coriander (cilantro)
  • 1 tablespoon Cooking oil
  • ½ teaspoon cumin seeds
  • ½ teaspoon black mustard seeds
  • Chopped fresh tomatoes, to garnish
  • Poppadums, to serve
