Preparation Method :

  • Trim the bananas and cut each cross ways into equal pieces with lengthwise slit along each piece of banana.
  • Finely chop the coriander leaves.
  • Mix together the ground coriander, cumin, chilli powder, salt, turmeric, sugar, gram flour, chopped fresh coriander and 1 tablespoon of the oil.
  • Carefully stuff each piece of banana with the spice mixture, without breaking the bananas into half.
  • Heat the remaining oil in a large pan and fry the cumin and mustard seeds until they begin to splutter. Add the bananas and toss gently in the oil.
  • Cover and simmer over a low heat for 15 minutes, stirring from time to time, until the bananas are soft but not mushy.
  • Garnish with the fresh coriander sprigs.


  • 1 bunch fresh coriander, few sprigs for garnish 
  • 5 green unripe bananas or plantains
  • 2 tablespoon ground coriander 
  • 1 tablespoon ground cumin 
  • 1 teaspoon chilli powder
  • ½ teaspoon salt 
  • ¼ teaspoon ground turmeric
  • 1 teaspoon granulated sugar
  • 1 tablespoon gram flour 
  • 75 ml Cooking oil 
  • ¼ teaspoon cumin seeds 
  • ¼ teaspoon black mustard seeds
